The current spring issue features a write up about Asparagus by our very own farmer, Johann Rinkens. Food tastes best when fresh and local, so look for asparagus, (and shallots and anise hyssop, see recipe) on the Fields Without Fences Culinary Availability List this season.
For the recipe, we went straight to our favorite renegade chef, Mr. David Ercolano. He is one of the few people in this world that has worked with every rare species and variety of everything we grow here. We can never seem to stump this guy - he is off the charts in taste, creativity, and know-how. Looking forward to testing this recipe out!
